The couple started making ice cream during lockdown and developed more than 30 flavours as demand soared.
Sophie has vowed to continue to make their award-winning ice creams as well as serving her own homemade cakes and savouries.
“I am super excited,” said Sophie, who grew up in Knutsford and studied hospitality and catering after leaving the town’s high school.
“We have always been massive ice cream fans.
“The highlight of our weekend during lockdown was coming here for ice cream.
“I want to thank Brian and Deborah for their continued support.
“Brian is still mentoring me.
“It will be business as usual.
“We haven’t changed any recipes and we’re keeping all the existing staff.
“Everything will be made using local ingredients and local suppliers.”
Sophie studied at the former Mid Cheshire College before graduating with a BA in Hospitality from Birmingham College of Food.
Her first job was at Cotton’s Hotel before she embarked on an exciting career which took her all over the world.
“I have worked in Canada, America, Germany and Dublin,” she said.
“I have managed restaurants and worked on cruise ships and five-star hotels.”
A year ago, she launched her own catering business, Sophie’s Kitchen.
“I took a giant leap, a career break from the Co-op,” said Sophie.
“We do birthday parties, weddings, funerals and everything else in between.
“I will be bringing my experience as we serve coffee and a selection of savouries and homemade cakes at our café. We have indoor and outdoor seating.
“We look forward to welcoming customers old and new.
“I’d like to say a special thanks to my husband Henry and family and friends for all their help and support.”
Sophie opens her new business at Dairy Farm on Church Lane on Friday, March 8, and is offering special events to celebrate Mother’s Day this weekend.
A living wreath workshop will be held on Saturday from 9.30am to 11am.
Afternoon teas will be served on Sunday from 12.
Treats include finger sandwiches, homemade scones with clotted cream and jam, homemade cakes and a scoop of homemade ice cream.
