A NEW restaurant, wine bar and shop is opening in Knutsford earlier than expected.
Linden Stores has announced its official launch for Thursday, November 23.
The independent family-run business has taken over the premises of Project 53 on Minshull Street, a craft beer, gin and pizza bar.

The former bar is being turned into an ‘intimate and relaxed’ restaurant, showcasing seasonal British food and a selection of wines.
Owners Chris Boustead and partner Laura Christie originally launched their unique bistro in London but moved to Cheshire with son, Ollie, to be closer to family and friends.
Reservations are now open for this exciting new hospitality venue in the town centre.
The restaurant will be offering 25 per cent off food and wine to take away as part of their official soft launch from Thursday, November 26 until Sunday, November 26.
Chef Chris named the shop after Linden Road, where he grew up in Scarborough.
The couple have 25 years of experience in hospitality, having run several restaurants together.
Chris focuses on seasonality and sustainability, particularly a ‘no waste’ approach.
Combined with Laura’s knowledge on low intervention wines and small scale winemakers, their business has grown from strength to strength over the years.
The concept originated in London before the pair moved north and set up shop in Audlem.
Their family relocation provided the ideal location for their next venture which will introduce a new 40-cover restaurant in Knutsford.
Chris said: “The abundance of fresh, local ingredients we now have access to right on our doorstep is really exciting.
“It’s going to make for some really interesting seasonal plates on our sharing menu.
“Continuing our sustainable approach, any food waste will always be utilised too, whether it’s towards cooking stock or daily specials.”
Laura has created a wine list of unusual labels, which caters to all budgets and focuses largely on sustainable, up-and-coming producers and British wines.
Guests can taste wines with a meal or buy some to take home.
Laura said: “The countdown to our opening week is finally on and we can’t wait to welcome guests to our Knutsford location.
“Our soft opening will allow us to celebrate this new chapter, whilst giving us the opportunity to gain some useful feedback from our first guests on both our menus and wine list.
“The response to our new opening has been brilliant so far, so we’re expecting reservations for November and December to fill up quickly!”
The sharing menu includes the likes of mackerel, fennel and Cinderwood Market Garden bitter leaves with apple and Cheshire gamer bird, turnips and leaves, wild mushrooms and quince.
Dinner reservations are available from Wednesday to Saturday, 6pm to 9.30pm.
The chef’s menu of sharing plates is available for £40 per person, with a menu under 12s at £20 per head.
A small à la carte menu will be available for walk-ins, as well the option to enjoy a glass of wine and bar snacks, such as pickled Lyme Bay mussels, chicken liver pate, cracker and apple, as well as a Yorkshire charcuterie board.

Lunch reservations are also available from 12 noon to 2pm, Friday to Sunday, with both the chef’s menu and à la carte menu on offer.
